Roman Pfaffl

Roman Pfaffl tends our vineyards with great intuition and many years of experience. He is currently experimenting with different forms of vine training to defy climate change. The hot summers, which are particularly dry in our area, are an increasing challenge. Roman developed our own “Pfaffl cut”. The vines are much higher and look like small trees. The grapes are well aerated but shaded, which preserves acidity. Professors from the University of Natural Resources and Life Sciences in Vienna have already taken a look at the new vine training system and are enthusiastic. “We need to rewrite our textbooks,” they said.
